Mood ring keys were an attempt to be vaguely scientific, I believe. Given that the rings changed on basis of temperature-- blue being the warmest, and thus presumably the happiest. At least, warmth generally gives people a feeling of contentment, I believe.

Blue here, however, seems to represent much more the stereotypical 'I've got the blues' kind of situation.
